Performance: Sassy Kraut
Sassy Kraut is a cooking show with a political twist-- watch Paloma Correa concoct her special sauerkraut recipe while ebbing between talking about vegetables, spices, and the current protest environment happening in Santiago, Chile.
A little bit about Paloma Correa: “I was born in Tennessee but grew up between Chile and Ohio. Studied photography, owned an art gallery for a minute but then worked as an art dealer for the rest of the 2000’s until I had a life crisis and studied permaculture in the south of Chile. Then I got crazy; I took every course, diploma and certificate related to regenerative practices and somehow ended up focusing on the processing part of food and studied fermentation with Sandro Katz. I had my own fermentation business that was going great until I fell in love. I moved back to the US-- now I work at a worker-owner cooperative incubator and ferment on the side-- just for me and my gut.”
